Pizza just like the old days. But with a little something extra.

Stone-ground organic flours, seasonal ingredients, small local producers, and meticulous attention to dough, baking, and pairings. At Shardana, the pizza is generous, visually stunning, and crafted with attention to every detail. A feast for the eyes—and even better to eat.

The Selection

The right ingredients make all the difference.

The secret behind Shardana’s pizzas lies in the search for the perfect ingredient. The dough is made with organic, naturally stone-ground flours selected by Mulino Marino—a company that has made quality, research, and care for raw materials the cornerstone of its approach.

We use only seasonal ingredients on our pizzas, carefully selected from small local producers and raw materials that reflect the character of the region. Because a good pizza starts with the right ingredients, prepared the right way.

Our Pizzas

Carefully crafted doughs. Pairings that are never ordinary.

Each dish strikes a precise balance: dough, cooking, ingredients, seasonality, and flavor. There are simpler pizzas, more elaborate ones, pizzas meant to be shared, and pizzas that change with the seasons. They all share the same underlying philosophy: eating well, without losing the pleasure of simplicity.

Pizza Nimbalto

The pizza that came in second place in the world championship.

The Nimbalto pizza takes its name from the stream that flows through Loano, and in 2023 it took second place at the World Pizza Championship in Rimini, among more than 140 competitors in the category.

This is a wood-fired pizza made with local ingredients: fiordilatte mozzarella, sautéed artichokes, Taggiasca olives, our homemade bresaola, and stracciatella cream. You’ll find it in the winter, when artichokes are in season. Because at Shardana, quality starts with respecting the right seasons.

Pizza and Wine

Pizza takes on a whole new flavor with the right wine.

At Shardana, even pizza has its perfect pairing.

The wine selection is designed to pair with the entire menu, including the pizzas. Sparkling wines, whites, reds, Italian labels, and producers worth discovering: each bottle offers a unique flavor profile.

A pizza with more savory flavors pairs well with a crisp white wine. A pizza with more intense flavors goes well with a smooth red wine. Ask us for advice—part of the fun is letting us guide you.
